White Chicken Adobo With Lemon Grass
Recipe idea from Irene’s white chicken adobo and MELINDA’s lemongrass chicken – CSI elementary batchmates/friends
Ingredients:
1 whole chicken cut in serving pieces
6 cloves minced garlic
2 tbsp canola oil
1 1/2 cups apple cider vinegar
1 cup water
3 tbsp fish sauce
2 tbsp sugar
2 tsp peppercorns,crushed
2 pcs bay leaf
3 pieces of lemongrass,cleaned, peeled and cut 2 inches long
Directions:
Heat oil in a pot and sauté garlic until light brown.
Add the chicken pieces, cook until skin turns golden brown
Add bay leaf, lemongrass and peppercorns.
Pour in 1 cup of water and the vinegar.
Bring to a boil and simmer for 30 minutes.
Add sugar and and patis then stir.
Bring to a boil and simmer until the chicken’s done and you’re left with a thick sauce.
Serve with steamed rice.
