Mango Salad
Ingredients
1 mango, medium-ripe, cubed
1/2 each red, green, yellow and orange bell pepper, cubed
1 small english cucumber, cubed (optional)
1 shallot, sliced
2 tablespoons finely chopped dry roasted peanuts (for garnish) optional
1/2 cup chopped fresh cilantro leaves (for garnish) optional
Dressing
2 tbsp lemon juice
Salt to taste
1 piece ginger, grated
1 tbsp sesame oil
3 tbsp olive oil
1 tbsp soya sauce
1 clove garlic, crushed
1 tsp sugar
Steps
1. Combine mangoes, bell peppers, cucumberĀ and sliced shallot in a medium bowl.
2. In anorther bowl, combine dressing ingredients
3. Toss the veggies with this dressing.
4. Garnish with cilantro and peanuts. Serve!
